You know how any Italian or French dish would be incomplete without a sprinkle of herbs? The same goes for Japanese food with sesame seeds. In particular, one of my all-time favorite Japanese garnishes is Goma Shio, which is sesame seeds roasted with salt. This one is made by Wadaman, one of Japan's premier sesame roasters, and is crushed to further release the aromatics and flavor.
This packet of goma shio will become your go-to garnish for all types of food, not just Japanese dishes. Just sprinkle a little over rice, on your onigiri, over chicken, cucumbers, shiitake mushrooms, stirfrys, salads, tofu, veggies, pickles, white fish, hummus, cookies, vanilla ice cream, anything with a cream sauce - you get the picture. It will add a salty nuttiness to your dishes.
Oh, and this is a great alternative seasoning to salt for people who are trying to reduce sodium intake. Just cook your food with less salt and garnish with just a little goma shio. The richness of the sesame seeds will add flavor to your dish without the aid of too much salt.
Etsuji Wada, 4th generation owner, is considered the best sesame roaster in Japan, personally roasting Wadaman sesame for over 45 years. Sesame roasting is a lot like coffee roasting, and attention to detail goes a long way. Wadaman sesame seeds go through a meticulous six-step cleaning process and a three-step roasting process at three different temperatures to extract the maximum amount of flavor.
