An outstanding, dry, Ultra-high-polish style sake that is both wonderfully light in body yet flush with layer upon layer of herb, fruit, and cereal notes. The whole rainbow motif really works out in this way: shimmering full spectrum flavor that seems lighter than air.

On the nose, you are greeted with a pleasant mix of herbs, fruit, cream, and a little barnyard hay. A little time in glass reveals cashews, melon, honeydew, and hearty toasted cereal (Grape Nuts?). There's also a super intriguing note of something like fresh rain. Maybe its the rainbow thing. 

This sake is polished to 50% and made with Dewasansan rice.
