How lucky are we in Portland that we have UMI Organic to make us fresh ramen noodles?? These are locally made and they contain high protein Western wheat and whole-grain barley flour so they're chock full of protein, fiber, and iron. These noodles have great flavor, texture, and chew, and would be a great addition to your homemade ramen. (Just please don't forget to put toppings on your ramen, lol). A quick hack for homemade non-fussy ramen broth: use equal parts chicken stock and katsuo dashi stock. YUM.
