Heiwa Shuzo's "Kid" Junmai is a tasty entry point for new sake drinkers. It presents a texture of soft spring water, with equal balance in savory and fruity notes. It has a depth and brightness in its aroma, texture and flavor, which makes for a sake that is at the same time both compelling as well as friendly.
The nose is quiet yet still energetic, showing a unique mix of aromas of marzipan, salt air, bamboo, pine, and peach. It's a cool and composed mix of fruity, savory, grassy, and herbaceous notes all together. The flavor profile is lightly salty which would have this sake do great with hard cheeses and raw oysters, as well as richer foods such as braised meats. This umami balances nicely with a fruit component showing ripe banana and bright citrus.
This sake is going to do great served at any temperature, warm, cool, or room temp.
Heiwa Shuzo was founded in 1928 in Wakayama Prefecture, and is located in a valley surrounded by mountains. The area's dramatic geography acts as a trap for a high level of precipitation which results in an abundant supply of high quality, soft spring water. This spring water, called Koyasan Nansui, is so highly regarded and recognized for its special qualities, that the source of it is enshrined in a temple that is now recognized as a World Heritage site! Heiwa brewery has gained massive popularity in Japan for it's playful and energetic "Kid" brand of sakes.
