A delicous Junmai Ginjo Namazake from Miho Imada. Imada-san is a powerhouse woman who is both president and brewmaster of her brewery. (Usually in Japan these two jobs are separate, as they are both quite demanding.)

Fresh, bright green apple fruit notes get a peppery herbaceous accent of herbs de Provence on the nose. On the palate, the acidity is clear and juicy. Notes of melon, apple, berry, thyme, and anise play out with gleeful abandon before clearing up succinctly after a medium-long finish. Yet another stellar, balanced, and unique sake from Fukucho, a brewery we love!
