These are Donko Shiitake, which means they are grown in the winter, which means they grow slowly, resulting in deep, robust flavor and extra plump meat. These are grown on sawtooth oak logs located deep in the forests of Oita and Kamamoto by a family-owned shiitake company. The cracks on the top of the cap are prized because it reflects quality mushroom growing skill and a beautiful nutty flavor. To get such high-quality mushrooms, they harvest the shiitake exactly 7 minutes after the mushroom blooms!
You can use these to make dashi or you can reconstitute them and cook with them. If you make dashi with them, make sure you eat the shiitake and don't throw them out!
PS. You can set the dried shiitake in the sun for an hour before cooking them to enrich them with Vitamin D!
