Hana Katsuo (bonito flakes) from our very own Forest Grove! Yamaki is a 100+ year old highly esteemed katsuobushi company based in Ehime, Japan, and they recently opened up a facility in Forest Grove, Oregon.
Hanakatsuo (this style of katsuobushi) is skipjack tuna that's been dried, smoked, and then shaved for easy use. Katsuobushi is a staple in Japanese cooking, especially when it comes to making dashi. Dashi is a broth (more like a tea) made from dried fish, konbu seaweed, shiitake mushrooms or any combination of these. My favorite and go-to dashi is katsuobushi and konbu. Besides dashi, katsuobushi is delicious as a garnish, sprinkled on top of sauteed veggies (especially spinach!), tofu, udon, or you can mix it with shoyu to make okaka to eat with rice.
