Tozai's Living Jewel is a beautiful, straightforward, sessionable sake. It is light-bodied, dry, springwater-like, and mildly aromatic with refreshing notes of banana, melon, and loads of ricey character. It is akin to a Pilsener or Helles Lager, but of the sake world.  In fact, fans of both sake and high-quality German lagers might enjoy Tozai Living Jewel Junmai quite thoroughly. 

Tozai is a US-export-only label produced by Kizakura Brewery in Kyoto Prefecture. The brewery is only 50 years old, which is quite young for a sake brewery. They also produce fantastic craft beer as well.
