Tensei's brewery is located in a famous Japanese surfing area. That's why they name sakes such as "Song of the Sea" and "Endless Summer". They love living by the ocean. It inspires them.
Although Song of the Sea is a High-polish, Junmai Ginjo sake, it doesn't quite behave like one. On the nose you'll encounter some green apple and strawberry notes, but from there on, Song of the Sea rides its own wave. This sake is nicely intense with a punchy cocoa bitterness that greets your first sip. There's a firm astringency that red wine and big bitter beer drinkers alike will enjoy. It's lightly savory (reminiscent of the ocean?) with secondary fruit and herb notes of grapefruit and lavender, as well as toasted cereal (Captain Crunch? Maybe that's just me getting too comfortable with the ocean theme.) Although the sake is intense upon its first greeting, the body (light-to-medium) takes the whole thing beautifully into balance.
Song of the sea is polished to 50% of its original grain size, and is made with Yamada Nishiki rice.
