Kinoko is the Japanese word for mushroom. Seeing as how the brewery president is also a passionate amateur mycologist (aka fungus scientist), Suwa Brewery sought to brew a sake that shows off the more savory, mushroomy profile possible within sake brewing, and that naturally pairs with all manner of mushroom dishes.
It's not really talked about, but all modern sake is part-fungus. Without Koji (aspergillis oryzae), a fungus that is grown on rice, and a core component of sake brewing, sake rice itself wouldn't turn into alcohol. With koji fungus playing such a central role in brewing, it doesn't often get the shine that it deserves. And koji does have a significant impact on the flavor of a sake, even if that impact is meant to be subtle. Why do so many errantly call sake "rice wine" when we might (just for fun) err to call it "mushroom wine" instead?! (Okay, that's a stretch.)
