This is a cedar-aged sake. Cedar barrel making is a dying craft in Japan, and companies like Kikumasamune are carrying the torch to keep the ancient traditions alive. Japanese cedar cooperage is very specialized, and very few master coopers exist in Japan. Cedar casks are made without the use of any nails, and barrel staves are hand cut and fitted together with hand-woven bamboo fastenings. Cedar sake spends a relatively short time in cask, often just one or two months at most, in order to not overwhelm the subtler flavors of the sake with heavy cedar. Kikumasamune uses kimoto-method sake (sake brewed with naturally cultivated lactic acid) for this sake, which adds a backbone of umami and earthiness.
