Limited amount available! An excellent, lightly bubbly, refined and mineral Junmai Daiginjo from Kaze No Mori. Kaze No Mori is know for their lively and wild unpasteurized sake, and this entry of high-polished Junmai Daiginjo is such a cool entry into the namazake market and something we haven't really seen much of yet. 

It's not as wild or fruity as one might expect from an unpasteurized sake. Instead the body of the Alpha 3 is light, crisp, and structured around flavors of yeast and stony minerality. The slight glint of bubbly carbonation is a wonderful textural touch as well. It's a real treat to get to enjoy such high-end, thoughtfully crafted namazake. We hope you can enjoy it soon as well.
