Kanbara's Bride of the Fox has a cult following for a reason. Hailing from the snowy Niigata, a sake brewing region renowned for its brews of nuance, deft balances, and silky textures, Kanbara represents all these hallmarks. However, Kanbara also sets itself apart from so many of the Niigata sake that I've ever encountered: while being lightly textured, it is also full of depth. It boasts rich aromas of hazelnut and dark chocolate (Nutella anyone?) along with blackberries, pepper, and rice husks. On the palate, you get lighter flavors that wittily defy the established presence of the nose. First, the springwater-like texture so typical to many Niigata sakes hits the mouth. Then follows a light astringency and acidity. The texture is dry, crisp, and linear. But the line drawn is a big fat one: well defined and straight, somehow encompassing and containing the bursting aromas into a tight and smart package.
Kanbara sings at room temperature but also is quite friendly chilled. When warmed it can be very rich and intense. I enjoy it slightly warmed, but it might not be for everyone. Kanbara is a wonderful pairing sake for burgers, roasted chicken, pizza, and seafood.
