Hoyo's Genji is a clean, crisp, and well-rounded sake that works great with loads of different foods, as well as on its own. We the 720ml size as well as the 1.8L size, because once you get hooked from trying the smaller bottle, you'll want to keep it around in the big format. This is a great everyday easy-drinking sauce.
On the nose is a melange of baked goods, from frosted cakes to whole wheat, to donuts. It smells like walking into a bakery. There are also nice notes of lemony citrus rounding it out. On the palate is more of the baked goodness, like biscuits, shokupan, and donuts. Balancing out the yeasty, doughy flavors is a smattering of citrus, in the form of bright, pink grapefruit and lemon zest, as well as green grape. There's also something reminicent of fresh, clean linens going on here. The sake is only sweet on the front end and winds up finishing very clean and slightly dry. It's medium-bodied, with a pleasant middle-of-the-road dryness on the finish.
Drink this one cold! And in the sun, if possible.
Hoyo is made by Uchigasaki brewery, who have been around since 1661. The Hoyo label has been in continuous production for nearly 350 years. The brewery is a small operation, with just six people working throughout the brewing season. Very little of what they produce gets exported.
