Kijoshu is a unique sweet style of sake, perfect for all sorts of desserts or pairing with cheese plates, charcuterie, or fresh fruit. This Kijoshu from Hakkaisan is aromatic and lush, with scent notes of Asian pear, peach, apricot, honey, and straw. On the palate it drinks smooth and viscous, filling the mouth with the ripe fruit flavors present on the nose. The finish is lingeringly sweet, without being cloying. Fans of Sauternes wine would heartily enjoy this.
Kijoshu gains it's sweetness and richness through brewing following a unique process where finished sake is added to the brewing tank instead of water. Kijoshu sakes are suitable for long aging and will gain deep golden and umber shades as years go on. Traditionally, Kijoshu in Japan have been aged by the brewery and released many years later. Hakkaisan's Kijoshu is fun and unique in that it is unaged. The brewmaster enjoyed the young and fresh expression of this sake so much that he wanted to share it with the public, breaking tradition and leaving his customers to decide whether or not to age it themselves.
