Gozenshu is a brother and sister-run family brewery. Their "Ancient Method" Nigori is their glimpse at what sake might have been like 500 years prior.
The cloudiness is light, more like "hazy" sake. It's not like a typical coconutty, thick, creamy Nigori. The predominant notes in both flavor and aroma are key lime, tart green apple, melon, and yogurt. There's a pleasant astringency and acidity that gives complexity to this brew.
The "Ancient Method" referred to here is called "Bodaimoto". Pretty much no one does it anymore. It's akin to lambic and farmhouse ales brewing away in open barrels, but the open-fermentation, as it happens for this sake, happens during the starter-mash stage. Wild, natural, lactic acid bacteria are grown, creating an acidic rice-water that then gets used to stabilize the rest of the sake brewing.
