On the palate: Pleasantly bitter and citrusy. Like the Italian aperitif drink Crodino. Bright and rich, yogurt like acidity. Mandarin orange, milk thistle. Creamy attack with a pleasantly bitter finish, that fades quickly into citrusy mouthwatering acidity that leaves you wanting more. Mimosa. Gin and tonic like herbaceousness.
The Gokyo “Five” series is an exploration of small batch sakes fermented in “Kioke”, or traditional small wooden casks. The series utilizes the Kimoto method of brewing lactic acid naturally using ambient lactobacillus bacteria to produce higher acidity, a slight gaminess, and higher lactic notes.
