Fukucho "Forgotten Fortune" is a lean and vibrant sake, reminiscent of the ocean. Its main feature is a sturdy but understated minerality. Backing this is notes of rice and savory herbs, as well as pine, peach, and citrus.
The brewmaster spent 10 years growing and working with Hattanso rice varietal before utilizing it in "Forgotten Fortune". Before she began her work in reviving it, this was a nearly forgotten strain of table rice. Hattanso is native to Hiroshima and brewmaster Imada's use of it reflects her passion to preserve the culture of Hiroshima through her brewing.
Miho Imada, maker of Fukucho is a woman who not only owns the brewery but also leads the brewing as brewmaster. This is exceedingly rare in Japan, and to our knowledge, she might be the only woman to hold both positions. She is a pioneer in her field as well, developing sake using non-traditional koji strains, cultivating her own yeast cultures, and reviving the Hiroshima heirloom rice varietal used in this sake.
