Very special sake alert! This is Denshin's summer-release, unpasteurized, high-polish, Daiginjo Namazake. Very limited. Fully delicious.
Tasting Notes
On the nose are aromas of Satsuma Mandarin oranges, apples, mango, cashew, Thai basil, and lemongrass. In the mouth, Denshin Natsu immediately comes across as dry, sophisticated, and deeply harmonious. Flavors of milk tea, coconut cream, and green plantain take the stage. And the texture is most impressive, with cloudlike softness, and luscious luxuriant viscosity.
Pairings
This may be a perfect sake for pairing with sashimi and sushi. And Fulamingo's Hiyashi Chuuka would be a total summer slam of a pairing. Anything light and/or bright would be awesome. Salads, sunomono, white fish with a squeeze of lemon, fruit salad, Thai green curry, or couscous also come to mind.
Production Notes
This sake isn't pressed, but rather, the sake mash is put into cloth sacks and only what drips out from the pull of gravity is what gets bottled. This type of "pressing" is rare and produces sake of exquisite textures.
This sake is unpasteurized(aka nama) and should be stored in your fridge. Most sake are pasteurized, which is a great technique for keeping flavors lean and clean. Unpasteurized sakes can pack an aromatic punch that some people love, and others find overpowering. Denshin Natsu is really great in that it's Nama-ness doesn't overpower at all. It's really beautifully integrated.
