We really enjoy this gluten-free tamari from Kikkoman. It's a great alternative to traditional shoyu/soy sauce for people who don't want gluten. Kikkoman brand tamari is great simply because it's well-rounded and inexpensive. Tamari tends to be a bit more rich in flavor than soy sauce and also has a smoother texture. It's basically interchangable with soy sauce.For folks who can't have gluten, but prefer the mellower, less umami-forward quality that soy sauce brings, you can always dilute the tamari that you add to a recipe with sake or water.
Normally, shoyu/soy sauce is made with wheat. Tamari, instead is made just from soy beans! It's basically a delicious byproduct of miso making, where the fermented soybeans used to make miso get pressed, and the liquid resulting from the pressing is tamari.
