This sushi vinegar is a ready-made perfect seasoning mix of sweet, salty, and vinegar for making sushi rice or even using in salad dressings, pickles, dips, sauces, and stir-fries. Iio Jozo makes their artisanal vinegar by hand, fermenting their own rice into sake, and then aging the sake with natural vinegar-mother to produce their vivid and delicious vinegar. The entire process takes years!
I have to admit, that I was a bit skeptical that I would ever need or use any sort of pre-mixed sushi rice seasoning. Especially when we already have Iio Jozo's near-perfect rice vinegar at the ready in our pantry, and my own pride as a home cook has me insisting that I learn how to produce balanced and properly seasoned sushi rice from raw ingredients. My skepticism was wrong. I don't know how they did it, but Iio Jozo made something here that I cannot replicate on my own. Chef friends have tried this as well and agree that there is some strange alchemical magic going on in this bottle that surpasses the sum of its parts. And it's parts are simple: water, rice, sugar, honey, and salt. I can't explain it, but I now cannot do without this vinegar.
