An extra-dry, herbaceous, and slightly woody gem from the small countryside brewery of Sugii Shuzo. This bottle leans a bit on the heartier side of things, with it's primary and distinctive feature being a balance that is aromatic of woody and earthen notes, with a touch of rustic character.
Made with Tamazake rice, using the naturally-occurring Lactic bacteria starter-method known as Yamahai.
Brewery owner/Toji Sugii-san is self-taught which is quite rare in the sake world. His independent streak is further highlighted by his desire to experiment and explore new sake expressions year after year.
