Seikyo's Omachi is bright and herbaceous, with light and clean fruit flavors like lime, mandarin orange, and watermelon. A soft rice-iness sustains throughout the drinking experience. This High-polish/Junmai Ginjo is wonderfully well balanced, with bright acidity and a crisp, clean finish.
We like to serve Seikyo Omachi chilled or at room temp. Food pairing that come to mind are ceviche, fish tacos, pho, Italian cured meats sandwiches, fried foods, and grilled spring vegetables.
"Omachi" is the name of a very special sake rice. Seikyo's Omachi Junmai is 100% Omachi, and shows a lighter expression of what wonders Omachi rice can do. Omachi is prized in sake making for its depth of flavor, structured body, and subtle fragrances. Discovered in 1859, Omachi was the first rice cultivated specifically for sake production. It's the original "heirloom rice". 70% of sake rice species have parentage traceable back to Omachi. It grows extremely tall and is prone to broken stalks and insect damage, so only seriously dedicated rice farmers grow it. Also, while the "shinpaku" (the white starchy heart of sake rice kernels) is large, the outer shell is thin and milling and polishing takes special delicate care. Those farmers and brewers willing to put up with the challenges of Omachi cultivation and production reward us drinkers with the evidentwonders of this magnificent rice.
